August Recipe of the Month- Chocolate Cake in a Mug

Ingredients.

  • 3Tbsp plain flour (23 g)
  • 2Tbsp white sugar (25 g)
  • 1Tbsp cocoa powder (7.5 g)
  • ¼teaspoon baking powder(1 g)
  • pinch of salt 
  • 3tablespoonsmilk(any kind of milk) (45 ml)
  • 1tablespoonscanola oil(or melted butter) (15 ml)
  • dash of vanilla extract
  • 1tspchocolate chips, or your favorite flavor baking chips (5 g)

Method.

  • Spray the bottom of a microwave-safe mug or coffee cup lightly with cooking spray.
  • Add flour, sugar, cocoa powder, baking powder, and salt and stir together.
  • Add milk, canola oil, and vanilla extract and stir until smooth, being sure to scrape the bottom of the mug. Stir in chocolate chips or sprinkle them on top.
  • Cook in microwave for 70-90 seconds until cake is just set, but still barely shiny on top. Allow to rest in microwave for 1 minute before consuming.

Notes/ add ins

  • Nutella (small scoop)
  • Peanut butter (small scoop)
  • Coconut flakes
  • Nuts
  • Cinnamon (small pinch)
  • Sugar can be halved or substituted for a sweetener or honey.
  • Oil can be substituted with applesauce or coconut oil
  • Flour can be substituted with whole wheat flour or gluten free (add extra for gf)
  • Dairy Free: use non dairy choc chips, milk and butter/oil
