Recipe of the Month: Gooey, Chocolatey Caramel Slice

The Ultimate Coconut Caramel Slice You’ll Want to Make Again and Again

There’s something about a slice that has it all—chewy caramel, nutty coconut, and a rich chocolate topping. This Coconut Caramel Slice is one of those treats that’s just as irresistible to make as it is to eat. Perfect for afternoon tea, lunchboxes, or sharing with friends (if you can bear to!), it’s simple enough for beginners and a guaranteed crowd-pleaser.

Ingredients

Base:

  • 1 cup brown sugar

  • 1 cup self-raising flour

  • 125g butter, melted

  • 1 cup desiccated coconut

Filling:

  • 1 x 397g tin sweetened condensed milk

  • 50g butter

  • 4 tbsp golden syrup

  • 1 tsp sea salt (or more if you like it salty-sweet)

Topping:

  • 250g milk chocolate, melted


Instructions

1. Preheat & Prep
Set your oven to 180ºC and line a 25x30cm lamington tin with baking paper.

2. Make the Base
Mix together the brown sugar, flour, coconut, and melted butter. Press evenly into the prepared tin and bake for 10–12 minutes, until golden. Let it cool for 15 minutes.

3. Make the Caramel Filling
Combine condensed milk, butter, golden syrup, and salt in a small saucepan. Stir over medium heat until it gently simmers. Pour over the base and bake for another 10 minutes. Allow to cool for 30 minutes—or overnight if you can wait!

4. Add the Chocolate Topping
Melt the chocolate in a microwave-safe bowl in 30-second bursts, stirring each time. Pour over the caramel layer and smooth with a spoon. Chill in the fridge until set.

5. Slice & Enjoy
Cut into squares and enjoy this indulgent treat with a cup of tea, coffee, or just on its own.

Pro Tip: Sprinkle a tiny pinch of sea salt on top of the chocolate for that perfect sweet-and-salty combination.
